Healthy Banana Bread
Banana bread was a favourite in my household growing up and now I have James in my life who constantly asks me to make it for him. This recipe is nutrient dense and good for body and soul with warming cinnamon and banana flavours. This was inspired from a Jessica Sepel recipe and is gluten, dairy and refined sugar free.

  1. Preheat the oven to 180°C and grease 1 loaf tin with coconut oil.
  2. Mix all the dry ingredients into a large mixing bowl.
  3. In a seperate bowl add mashed bananas, whisked eggs, melted coconut oil, vanilla essence and plant based milk.
  4. Slowly add the wet ingredients to the dry, stir as you add the wet mixture until everything is combined. Add more flour if the mixture is too wet or more plant based milk if too dry.
  5. Spoon batter into the loaf tin and add a banana sliced in half length ways to the top. Bake for 40-45 minutes.
  6. Once cooked, leave the loaf in the tin to cool before slicing and serving.
